Higashimaru Soy Sauce has been making soy sauce for over 400 years since the Tensho era. Our light soy sauce is formulated to bring out the natural flavors of the ingredients, while our dark soy sauce is mild and unctuous, allowing you to savor the umami of soy sauce. We are particular about raw materials and promote local production for local consumption with the help of local farmers. It is a combination of light and dark soy sauces with the umami of Harimanada's oyster extract, which gives it a savory flavor while bringing out the flavor of the ingredients. The umami of Harimanada oysters combined with bonito and kelp dashi gives it a soft, deep flavor.
